Almost all knife makers in Japan produce two types of knives with different series. Particularly Western and Japanese knives in their quantity will really confuse you in choosing which and who is more beautiful, durable and suits you better.

So the selection decision is very important and you have many things to consider. Nenohi Cutlery was founded in 1975 by Mr. Norio Sawada and became an Incorporation on May 2, 1987.Mr. Norio Sawada was aiming to produce Japanese Knives that will be known and popular around the globe.

The company was now under the management of their second generation Mr. Yusuke Sawada that brings the company to drive innovation and until today they were striving so hard to provide more beautiful and high-quality knives.

They embrace the traditional and combine this to the modern techniques and materials that they keep in secret due to competition. They are producing 2 brands the Nenohi which is a Japanese type Knife (Traditional knife) and Nenox a Western Type of knife that elite chefs are patronizing.

They have offices in Inokuchi, Nakai-cho, Ashigarakami-gun, Kanagawa and you may visit them in Tsukiji, Chuo-ku, Tokyo  open from 9:00 am to 3:00 pm and they are close every Wednesday.

On March 11, 2021, they released a statement about stopping the sale of one of their products. The product’s name is NENOX S Series Ivory Corian Handle, one of the Nenox series.

There will also be a change in the price of Steel Honyaki Knife and Kaede Honyaki starting April 1, 2021, this change is caused by the increase in the price of raw materials used in the construction of knives. So for those of you who plan to buy Steel Honyaki Knife and Kaede Honyaki, it may be better to purchase earlier while the new net price has not yet been implemented in the market.

The Nenohi series was developed in collaboration with two traditional government -certified blacksmiths, they are Kajiya (blacksmith) and Togishi (master sharpener).

Kaede Honyaki is a series of Japanese kitchen knives that are rust resistant and possesses the sharpness of traditional kitchen knives. It has seven different types of knives you can choose from. The handle is made of Ebony Wood (Magnolia pattern as an option) and has an octagonal shape that gives a moderate weight, high durability and it does not slip and fits on your hand.The blade has a flat mirror surface finish and a Japanese name was engraved in front. Here is a Japanese knife collection of Honyaki Knives; presenting the Shiramoto Yaki, Shiramizu Honyaki and Aohonyaki. Shiramoto Yaki is a series that is recommended for professionals that consist of four types of knives with an inherent blade length of 300 mm. Next in line is the Kasumi Knives, a Japanese kitchen knives collection formed by traditional forging methods of Japan, possessing durability, sharpness and affordable price. Introducing the Shirakami Kasumi, White finest haze and Blue finest haze. Shirakami Kasumi is made of white steel made by careful forging at low temperatures to ensure the sharpness of the knife is not damaged, it consists of eight different types of knives. The Nenox Series is a Western type of knife that Mr. Sawada’s customized by the use of special and best materials and non stop improvement. Introducing the three series of Western knives the Nenox S Series, Nenox Premium and Nenox A Series. Nenox S Series is a collection of Black linen Mycarta, White Marble Corian, and Iron wood. Their name was from the material used on their handle. Nenox Premium has a special handle made of Jigged bone available in different colors and Carbon fiber. These are just a few of my knives. I have a lot more but I love the look of these. The shorter gyuto is my daily use though. I haven’t really had issues with the edge like I’ve seen other people post here.

Best non carbon steel knife imo nenox. Misono UX10 is pretty good too
