Iseya Knife History and Knife List

Iseya knife a brand by Seto Cutlery Mfg. Co. Ltd. was founded since 1908, at the Capital of Seki city, Japan, this city has been cultured in the 800- year history of blade.

The Iseya knife are made by Mr. Yoshinori Seto (representative of YOSHI Knife and a member of knife maker association “Knife Maker Guild USA”), it is hand-made and specialized in Damascus steel. Damascus steel has known to have exceptional edge retention, sharp edge, stain resistant and an alluring appearance.

Making these knives a choice for any chef and loved by people who are using them.

The I-Series

Iseya 33 layer VG-10 Damascus Hammered

Made of 33 layers of Damascus-Hammered (Tsuchime) texture blades with a core of high carbon VG-10 stainless steel for professional. The handle is made of D-shape black laminated wood, designed with engraved bamboo grass.

These series featured eight kind of knives such as Paring Knife, Petty Knife, Vegetable Knife, two Santoku Knife available in different length 180mm and 135mm, Yanagiha (Sashimi) Knife and two special set of Gyuto knife and Saya (Cover) coated with lacquer and 24K Gold. Available length is 210mm.

How to take care of your Iseya Knife?

– To refrain from the blade chipping or breaking, do not attempt to cut, hit or chop frozen products or bones.
– Hand wash with warm water and towel dry.
– Use a sharpening stone to maintain the sharpness of the blade.
