The first and oldest knife manufacturer of Western style knife in Japan is none other than, the Misono Cutlery Co., Ltd. that was being manage by Mr. Toru Shimizu together with his relatives Kimio Shimizu as the Chairperson, Junji Shimizu and Akira Shimizu as the Director.
The family started in 1935 by producing blade for vegetable peelers, in the year 1945 they began importing painting palate knives and in 1960 the journey of being the oldest manufacturer of western knives started.
They combined the advanced technology with the traditional forging techniques as their method and the 150,000 production every year was all hand done by Misono. Their reputation is to produce strong blades that are easy to maintain.
They are located in 27, OBUTOCHO SEKI, GIFU, 501-3210 Japan the capital of Swordsmith where you can find a lot of high-quality forged knife.
They own the 800-year history of knife making with the use of Japan’s traditional Swordsmith Technique.

UX10 Series
This series is a compilation of different knives that became the front runner of Misono Brand such as:

Made of pure Swedish Stainless steel that makes these knives sharp edges, hard, rust resistant, easy to resharpen and is made of Japanese tradition “Hagane”. 440 Series
This series is made to meet the professional chefs demands, a compilation of different type of knives for you to choose from, these knives was formed by the use of High 16 Chromium and Molybdenum Stainless Steel. With the help of this steel these knives increase edge retention, rust resistant and easier to re-sharpen. With the help of this steel these knives increase corrosion resistant, great durability, sharp edges and easier to re-sharpen. The handle is made of POM (polyoxymethylene) which are water resistant, comfortable and easy to grip. You have options in this series such as:

EU Carbon Steel Series
This series is made and developed by the Japanese forging tradition the Hagane which provides excellent edge sharpness, very good edge retention and is easy to re-sharpen. Everything became possible because of their use of Swedish high carbon steel but due to the Carbon characteristics it is normal that without proper care it rusts easily. Rusting can be avoided by keeping the knife dry after using others also use the oil applied to it. Some of the knives in this series also have a very beautiful carving of a dragon and a flower that is really interesting. It also comes in a variety of lengths and sizes to suit the needs of professional cooks. Here are the different types of knives and sizes.
