These names brought about one of the changes in the knife-making industry in Japan.
Yuzo Watanabe founder of Yoshida Metal Industry Co., Ltd., Mino Tsuchida aka “Mr. Global” founder of Master Cutlery Corporation and the face of Global knife and Komin Yamada is the one who design the series of Global knife, together in 1983 they successfully launched the Stainless-Steel Knife they named “GLOBAL”.
This knife finished the issues of Traditional Japanese Knives that required a good maintenance to prevent rusting. The ever first Stainless-Steel knives Yuzo Watanabe made was the Bunmei Gincho in 1960.
In 1988 with the help of Mr. Mino Tsuchida his company Master Cutlery corporation exported the “GLOBAL” at International Trade Fair in Frankfurt, Germany, since then their knives started to be known worldwide not just that they also receive some award of recognition. Since 2016 the Yoshida Metal Industry has been led by Masahito Watanabe.

A collection of well selected items that consists of Western and Japanese types of Knives, with a variety of sizes and styles with a deliberate type of usability option. The blade was shape evenly ground on both edges or Flat ground that was belong to western double bevel, possesses fine sharpness and durability. The handle is designed with non-colored plain dot handle, the whole blade is made of Stainless Steel. Classic
A collection of different kitchen tools with a variety of sizes and styles with a deliberate type of usability option. This is also the series that makes Global more popular, made of CROMOVA 18 steel that makes the blade edge longer compared with any major knife brand. It has a convex edge that doesn’t require you too much energy on cutting. The handle was like the Global series that has a Black-dotted makes it comfortable to hold and Slip-resistant. Ukon
It is a collaboration formed between Global and Williams-Sonoma, this collection was not sold in Japan. Made of CROMOVA 18 steel that makes the blade edge longer compared with any major knife brand. It has a thick blade that gives it guaranteed durability and strength. Ni
The second in line that’s the reason it was called NI is a Japanese word that means number two or second. Together with the UKON and SAI they are all not sold in Japan. This knife contains every characteristic a Global knife has, made of CROMOVA 18 stainless steel while the handle remains to have a design of non-colored plain dot handle at the center. Its difference with the other two series is, the blade of NI is thicker with slightly longer handles and has slightly rounded shape. Sai
Same as the Ukon this series is not being sold in Japan, designed by the famous designer of Yoshida Komin Yamada. This is to pay tribute to the forging tradition of the Samurai in Japan. Made of CROMOVA 18 stainless steel that was hammered by hand providing its blade a long-lasting endurance and non-stick surface while cutting, while its convex edge design doesn’t require you too much energy on cutting. The handle has a thumb rest that added comfort and control while gripping and they put seven black dots on it that represents the seven Samurai code of honors and principles.
